We only sell high-grade Australian Manuka (MGO 250+ and above) to ensure all of our honey is suitable for wellness applications. Australia’s Leptospermum species produce some of the highest MGO levels found in Manuka honey.
Unlike many Manuka honeys that are creamed, Hill Hive Manuka honey comes in its natural liquid form. This means we can use very gentle processing methods to preserve all of the honey’s beneficial compounds and make it easier to use in drinks, food, and skincare.
Our Manuka honey is not only nutritious but also delicious. It offers a range of flavour profiles, reflecting Australia’s diverse Leptospermum varieties. Unlike many Manuka honeys that have a slightly bitter after-taste, Hill Hive honey is always smooth and enjoyable.
MGO, or Methylglyoxal, is the key compound responsible for the unique antibacterial properties of Manuka honey. MGO is formed from DHA (Dihydroxyacetone), a compound in the nectar of Manuka flowers. Bees collect this nectar, and over time, DHA naturally converts into MGO, giving Manuka honey its potent antibacterial properties.

The MGO rating on a jar of Manuka honey indicates the concentration of Methylglyoxal it contains. Another commonly used rating system is UMF (Unique Manuka Factor). Though they represent slightly different aspects, higher ratings in either system mean more potent honey.
